高铁肌红蛋白还原酶及其对肉色稳定性的作用综述

摘  要:
概述了高铁肌红蛋白还原酶的研究经历、命名,以及几种被人们所识别的高铁肌红蛋白还原酶,阐述了NADH-细胞色素b5还原酶的分子量、细胞定位及还原高铁肌红蛋白的机理,综述了高铁肌红蛋白还原酶的酶学特性,对高铁肌红蛋白还原酶在稳定肉色方面可能起到的作用进行了讨论。

摘  要:
The nomenclature,research process of metmyoglobin reductases and several metmyoglobin reductases known by researchers were summarized.The molecular weight and the cell orientation of NADH-cytochrome b5 reductase,and the mechanism of redox metmyoglobin were introduced.The character of metmyoglobin reductase was depicted,and the possible effect of NADH-cytochrome b5 reductase on the stability of meat color was discussed in this paper.
