溶血磷脂的乳化性能研究

摘  要:
研究了溶血脂的乳化性能,研究表明:溶血磷脂乳化油脂的能力是普通磷脂的5倍左右;随磷脂浓度的升高,溶血磷脂的乳化稳定性大幅度提高;普通磷脂和溶血磷脂在酸性条件下的乳化稳定性均较差,在碱性条件下溶血磷脂的乳化稳定性更好;溶血磷脂在高温和低温下的乳化稳定性都大于普通磷脂。

摘  要:
The emulsification capabihity of lysophospholipid was studied. Results showed that the ability of lysophospholipid in emulsifying lipid was about 5 times of that of common phospholipid.The emulsification stability increased greatly with the rise of phospholipid concentration.Both common phospholipids and lysophospholipid had poor emulsification stability under acid condition and the lysophospholipid had better emulsification stability under alkalescence condition.The emulsification stability of lysophospholipid was higher than that of common phospholipid both at high and low temperature.
