宰前氧化应激对肉鸡肉品质的影响

摘  要:
研究了地塞米松(DEX)诱导的宰前氧化应激对肉鸡肉品质的影响.选用24只健康且体重相近的39日龄科宝500肉仔鸡,随机分为3组,其中对照组注射等量生理盐水,试验1组和试验2组每千克体重分别注射DEX 3 mg和6 mg,连续注射3 d.结果:宰前氧化应激显著降低肉鸡日均采食量(P<0.05),DEX注射组体重显著下降(P<0.05),屠宰率及腿肌率降低(P<0.05),胸肌率差异不显著(P>0.05);胸肌pH24h显著下降(P<0.05),红度值(a*值)显著升高(P<0.05),失水率显著增加(P<0.05),剪切力值差异不显著(P>0.05);腿肌pH45min及pH24h均极显著下降(P<0.01),剪切力值极显著升高(P<0.01),失水率差异不显著(P>0.05);血浆、胸肌及腿肌丙二醛(MDA)含量显著升高(P<0.05),血浆谷胱甘肽过氧化物酶(GSH-Px)、总抗氧化能力(T-AOC)与过氧化氢酶(CAT)活性显著升高(P<0.05).这些结果显示应激状态下肉鸡机体抗氧化系统会产生抗应激保护反应,这种反应虽然对维持机体生理机能有一定意义,但同时也会导致生长性能和肉品质显著下降.

摘  要:
Effects of preslaughter oxidative stress induced by dexamethasone(DEX) on meat quality of broilers were investigated.Twenty-four broiler chickens of Cobb 500 at 39-day-old with similar body weights(BW) were randomly divided into three treatments: sham injection of saline(control),daily subcutaneous(s.c.) injection of DEX(3 mg/kg and 6 mg/kg of BW,respectively) for 3 days as trial 1 and trial 2.The results showed that average daily feed intake and BW of chickens were significantly decreased in DEX treatments(P<0.05),same as the change of the dressing percentage and leg muscle rate.However,the variation of breast muscle rate was not significantly affected(P>0.05).In addition,the DEX treatment significantly decreased the pH at 24 hours after slaughter of breast muscle(P<0.05) and significantly increased the redness(a*) and water-loss rate of breast muscle(P<0.05),but had no significant influences on shear force of breast muscle(P>0.05).Furthermore,the pH of thigh muscles at 45 minutes and 24 hours after slaughter were significantly dropped in the DEX treatment(P<0.01),while the shear force of thigh muscle was significantly augmented(P<0.05),the change of water-loss rate of thigh muscle was not significant difference(P>0.05).Finally,the MDA in the plasma,breast muscle and thigh muscle,the plasma activity of glutathione peroxidase(GSH-Px),total antioxidant capacity(T-AOC) levels and activity of catalase(CAT) were signigicantly enhanced in the DEX treatment(P<0.05).Together,our results suggested that the body anti-oxidative systerm could be activated when broilers exposed to oxidative stress.Although such response could be useful against oxidative injury but result in decreasing growth performance and meat quality.
