红酵母类胡萝卜素提取工艺及色素稳定性研究

摘  要:
从细胞壁破碎方法及类胡萝卜素提取条件等方面对红酵母类胡萝卜素提取方法进行了优化;研究了红酵母色素的光稳定性、热稳定性及山梨酸钾对其保存的作用。结果表明,酸热法是红酵母破壁较理想的方法,最佳优化提取条件为盐酸摩尔浓度2 mol/L,盐酸用量10 mL/(g干菌体),浸泡时间60 min;红酵母色素的热稳定性和光稳定性较差,红酵母色素保存时添加一定浓度的山梨酸钾对防止其氧化有一定的作用。

摘  要:
Extraction of carotenoids from Rhodotorula sp.by breaking cell walls and other extracting conditions was optimized;then the photostability and thermal stability of Glutinis pigment,storage function of potassium sorbate were also studied.The results showed that the method of combining hydrochloric acid with heating was suitable for cell rupturing of Rhodotorula,The optimal condition was soaking in HCl at the concentration of 2 mol/L with an dosage of 10mL/g(dry cells) for 60 min.The stability of pigment reduced quickly if directly exposed to heat and light;but adding certain concentrate of potassium sorbate could protect the pigment from oxidating during storage.
