野木瓜水溶性粗提物工艺优化及美白效果分析

摘  要:
为探明野木瓜水溶性物质的美白特性,对产品的多元化开发提供理论支持。以野木瓜粗提物对邻苯三酚的自氧化抑制率作为考察方向,对野木瓜粗提物的提取温度、时间、料液比及pH进行工艺优化,得出最佳工艺;检测野木瓜粗提物中SOD活性、总蛋白、水溶性多糖、柠檬酸含量,评价水溶性物质的提取效率;用最佳工艺条件下的粗提物为样品,以熊果苷与酪氨酸氧化酶抑制体系作为参照评价其美白特性。结果表明:料液比1∶5,提取pH 7.04,温度65℃,提取时间2h所得粗提物对超氧阴离子的抑制率最高,为73.1%;该工艺条件能获得野木瓜主要的水溶性物质,所得粗提物的美白效果相当于2.74mg/mL熊果苷。由此得出:野木瓜水溶性粗提物具有较好的美白效果,可以进行美白产品开发。

摘  要:
In order to provide a theoretical support for the diversified development of the product,a preliminary study was carried out on the whitening properties of water-soluble substances from S.chinensis.The extract process of water-soluble extract from S.chinensis was optimized by changing temperature,time,solid-liquid ratio,pH,and the inhibition rate of the three phenol autoxidation.The extraction efficiency of water-soluble substances was evaluated by detecting SOD activity,total protein content,water soluble polysaccharide content and citric acid content in crude extracts of S.chinensis;The crude extract from optimal extraction process was used as the samples,using arbutin and tyrosine oxidase inhibition system as a reference to evaluate the whitening characteristics.Results:Optimized extraction conditions of water soluble extract from S.chinensis is pH 7.04,solid-liquid ratio 1∶5,temperature 65℃,extraction time 2 hours,crude extracts whitening effect is equal to 2.74 mg/mL arbutin.It is concluded that the water soluble extract fromS.chinensis has better whitening effect,and the whitening products can be exploited.
