燕窝的营养功效与真伪鉴别研究进展

摘  要:
对燕窝的来源、营养成分和主要活性物质、功能作用等问题进行了综述。针对目前利用燕窝掺伪谋取暴利日趋严重的现象,总结了燕窝掺伪的鉴别方法:理化鉴定、光谱鉴定、生物鉴定及其他仪器鉴别法。同时探讨了目前燕窝市场存在的问题并对燕窝未来的发展进行了展望。

摘  要:
The sources,nutrients,active substances,functions of cubilose are reviewed. In view of the current phenomenon of cubilose adulteration for profiteering,the methods to identify the true cubilose are summarized as follows,such as physical and chemical identification,spectrum identification,biological identification and other instrument identification. Meanwhile the current status of cubilose market and the prospects of cubilose development are elaborated.
