燕窝主要营养成分及其唾液酸酶法提取工艺

摘  要:
测定燕窝中蛋白质、氨基酸、脂肪和唾液酸的含量,以了解燕窝的营养成分;运用正交试验研究木瓜蛋白酶酶解提取燕窝唾液酸的最佳工艺条件.结果表明:燕窝是一种高蛋白、低脂肪的食品,必需氨基酸占氨基酸总量的42%,特征活性物质——唾液酸的含量达13.47%;在酶解时间2.5 h、液料比30∶1、酶解温度45℃、p H 8的最佳提取工艺条件下,唾液酸的提取率为(9.98±0.05)%,比传统水提法的提取率提高了9.91%.

摘  要:
In order to understand the composition of nutrients and sialic acid in edible birds' nest,the contents of protein,amino acids,fat and sialic acid were tested. The optimum enzymatic extraction conditions of edible birds' nest sialic acid were also investigated. It was showed that bird nest is a kind of high-protein and low-fat food,in which the content of essential amino acids was42%,the content of characteristic active substance was 13.47%. Based on the single factor experiment,the optimum process parameters using response surface methodology were obtained as follows: enzymolysis temperature 45 ℃,liquid-solid ratio 30 ∶ 1,enzymolysis time 2.5 h and p H 8. Under these conditions,the extraction yield of sialic acid was( 9.98±0.05) %. Compared with traditional water extraction,the extraction yield of sialic acid was increased by 9.91%.
