巴氏消毒牛奶与羊奶粉中主要蛋白质组成的SDS-PAGE比较

摘  要:
采用SDS-PAGE凝胶电泳方法对相同蛋白质质量和相同样品体积的巴氏消毒牛奶和羊奶粉的蛋白质组成进行分析,分离后的凝胶经考马斯亮蓝染色得到巴氏消毒牛奶和羊奶的电泳图谱,比较了巴氏消毒牛奶和羊奶中蛋白质组成的差异。结果表明,在同等条件下,牛奶中的αs-酪蛋白和β-酪蛋白以及κ-酪蛋白含量均高于羊奶粉。

摘  要:
Sodium dodecyl sulfate polyacrylamide gel electrophoresis(SDS-PAGE)was employed to study protein composition of pasteurised milk and goat milk powder with the same weight and the same volume respectively.After separation,the difference of protein composition between pasteurised milk and goat milk powder was compared.The results showed that the contents ofαs-casein,β-casein andκ-casein in cow milk were higher than that in goat milk powder respectively under the same conditions.
